Tuscan Grilled Vegetables

Ingredients

  • 2 Red Onion, quartered
  • 1/8 tsp. Freshly Ground Black Pepper
  • 2 tbsp. Balsamic Vinegar
  • 1/2 tsp. Dried Italian Herbs
  • 1 tbsp. Better Than Bouillon® Vegetable Base
  • 1/2 tbsp. minced garlic, about 3-4 cloves
  • 1/4 c Olive Oil
  • 2 Red Bell Peppers, cut in half and seeded
  • 2 Yellow Squash, split lengthwise
  • 2 Zucchini, split lengthwise
  • 1/4 c Freshly Grated Parmesan Cheese

Instructions

  1. In a small mixing bowl add the olive oil, garlic, vegetable base, Italian herbs, vinegar, and black pepper.
  2. Whisk together.
  3. Pour marinade into a resealable plastic bag and add the cut vegetables.
  4. Refrigerate for 1-2 hours.
  5. Preheat grill to 400° F.
  6. Remove the vegetables from the marinade and place directly onto the grill.
  7. Grill the vegetables for 2-3 minutes per side.
  8. Carefully remove the vegetables from the grill to a serving platter.
  9. Sprinkle with the Parmesan cheese and serve immediately.
