New Mexico Burger with Roasted Peppers

  • 6 oz fresh pork chorizo, ground
  • 1 lb ground beef
  • 1 tsp. Better Than Bouillon® Ham Base
  • 1 tsp. freshly ground black pepper
  • 4 Roasted poblano peppers
  • 1/2 c mayonnaise
  • 1 tsp. Mexican seasoning
  • 4 Hamburger buns, split and toasted


  1. In a large bowl, mix the chorizo, beef, ham base and black pepper.
  2. Form into 4 equal patties.
  3. Mix the mayonnaise and Mexican seasoning in a small bowl and set aside.
  4. Heat the grill to 450° F.
  5. Place the burgers directly onto the grill and grill for 5-6 minutes per side.
  6. Carefully remove the burgers from the grill to a platter using a long handled spatula.
  7. To serve, spread the mayonnaise mixture evenly among each bottom bun, top with the burgers and one roasted pepper each.
  8. Serve immediately.
